Aubergines in extra virgin olive oil

Among the various products it produces La Pietraperto we find the aubergine, potassium rich vegetable, magnesium and phosphorus.
The property hey are multiple: diuretic and rich in fiber, antioxidants.
The  vegetables are chosen after an accurate selection, which represents one of the cardinal principles on which the company is based.
Once you have collected they are cleaned and cut to be cooked in water and vinegar.
After that the aubergines are preserved in extra virgin olive oil.
