Dried peppers (fried they become cruschi) IGP from Senise
Sudrise offers online the sale of IGP Senise Peppers, the originals, obtained through strict adherence to the production regulations. They are very famous as cruschi peppers. Defined as thered gold of Lucania , Senise Peppers have now fully entered Italian gastronomy, so much so that even renowned chefs use these vegetables, which are harvested at the end of August and the beginning of September, selected, and laid out on cloths until they turn red.
This is followed by the construction of the "serta" or necklace, which is done manually.
They are then hung from the ceiling or balconies away from direct light.
They become dry and can be stored for up to 1 year.
Their most original and famous cooked variant is the "Crusco" (fried for a few seconds and then left to cool for a few minutes to achieve a crunchy texture). The Peperone di Senise IGP is produced in a specific area of Basilicata identified in the regulations (Senise and other nearby municipalities) which also sets the strict production rules.
The Peperoni di Senise IGP that you will receive are branded Sudrise. We have selected the best from the producers so that we can personally take responsibility for the excellent quality of the product.
