SemiBrado Lucano breeding pillow
The pillow is the part of the typical pork cheek to be used for The Amatriciana or Carbonara.The animals used are bred in the semi-crady state within the Pollino National Park.
The classic shape of the pillow is triangular. The meat is put under salt for just under a week and then spicy, with pepper, ground pepper and other aromatic herbs. Then follow a long seasoning.
