One of the oldest legumes from southern Italy, sometimes forgotten due to its challenging cooking process. However, thanks to the Ciavatta company in Puglia, this is no longer an issue—you can now enjoy cicerchia without the skin. Its appearance and organoleptic characteristics are a cross between a fava bean and a pea. Like all legumes, cicerchia is an excellent source of plant-based protein, making it perfect for vegan and vegetarian diets.
