Pancetta Tesa Lucana
Bacon is the lower part of the pork meat. It is wisely spiced and left to mature for over 3 months. It is called pancetta tesa because it retains its shape and because the rind is still present.
Why do we recommend it?
The Pancetta we present has more than 3 months of aging, contains no colorants or preservatives. The meat comes from semi-wild pig farms.
Piero, the head of processing and the salami factory, uses spices such as Senise IGP Pepper, cave salt, and wild fennel from Baragiano.
