Fleur de sel is a very precious type of salt, produced in small quantities, harvested by the
salt worker daily. Fleur de sel, in fact, forms through the evaporation of the surface layers of water present in the salt pans. The crystals of fleur de sel form like a
veil that floats on the surface of the water and are collected during the early hours of the
morning in the absence of wind, before they sink to the bottom.
Fleur de sel does not contain inclusions of mother brine, which is present in the crystals
of salt harvested from the bottom.The absence of mother water droplets gives the fleur de sel a delicate flavor without leaving the typical aftertaste of salt crystals, therefore it is mainly used in gourmet kitchens
