Sheep Cheese with Black Pepper

Cheese with black pepper from Vincenzo Videtta, produced with farm milk in Abriola. The flock grazes in an untouched Lucanian area full of evergreen herbs.
This cheese is aged for over 4 months and spiced with black pepper. It has a very thin hazelnut-colored rind and a pale yellow interior. On the nose, it is pleasant with the aroma of black pepper clearly noticeable. In the mouth, it is soft, firm in texture, and spicy due to the coarse pepper grains. Excellent as an appetizer, paired with a local wine.
