Stigliano Soppressata

The soppressata is a typical cured meat of southern Italy, but what varies from region to region are the ingredients used. In Stigliano, a municipality in the Collina Materana, as in all of Basilicata, only Black Peppercorns and Saltare used.
The shape of the soppressata is flat because it follows a "loading" process that makes the cured meat flat. It is always produced with the finest cuts of pork.
