Altamura bread along with that of Matera is certainly one of the most popular loaves in Italy. It is produced with semolina Rubbed with durum wheat Italian and cooked in a wood oven. The leavening is with mother and beer yeast. Its form called acrimatal is the one that differentiates it among other breads.
