Produced from the Signora pear that grows in Valsinni, a charming valley in the southwestern part of Basilicata. Domenico, who has been committed to preserving this variety for years, has managed to obtain the Slow Food Presidia. The consistency of this jam is not the classic one we might expect but is more liquid, this is because the processing of the pear is very difficult due to its high water content. It is excellent when paired with cheeses aged over 12 months.
