Made from the Pera Signora, which grows in Valsinni, a picturesque valley in southwestern Basilicata, this jam is a labor of love by Domenico, who has been dedicated to preserving this variety, now recognized as a Slow Food Presidium. The consistency of this jam is more liquid than usual due to the high water content of the pear, making it challenging to process.
