Made from the Pera Signora, which grows in Valsinni, a picturesque valley in southwestern Basilicata, this jam is a labor of love by Domenico, who has been dedicated to preserving this variety, now recognized as a Slow Food Presidium. The consistency of this jam is more liquid than usual due to the high water content of the pear, making it challenging to process. Despite this, it pairs excellently with cheeses aged over 12 months.
