Semi-aged goat cheese from Basilicata, produced in Lagonegro at the foot of Mount Sirino. The goats, raised with care and attention, graze freely in the green pastures from March to October. This freedom of movement and natural diet of herbs and wildflowers impart a unique, nuanced flavor to the milk, which is reflected in the cheese.

The semi-aged goat cheese undergoes a medium-length aging period, usually between two and four months. During this time, the cheese develops a balanced texture, more compact than a fresh cheese but still soft and creamy inside. The flavor is complex and aromatic, with slightly tangy notes typical of goat's milk, enriched by herbal and floral hints from the goats' natural grazing.
