Semi-Aged Goat Cheese from Lucania
Semi-aged goat cheese from Basilicata produced in Lagonegro at the foot of Mount Sirino. The goats, raised with care and attention, graze freely in the green pastures from March to October. This freedom of movement and the natural diet based on herbs and wildflowers give the milk a unique flavor rich in nuances, which is reflected in the cheese.
The semi-aged goat cheese undergoes a medium aging process, usually between two and four months. During this period, the cheese develops a balanced texture, firmer than fresh cheese but still soft and creamy on the inside. The flavor is complex and aromatic, with slightly tangy notes typical of goat's milk, enriched by herbaceous and floral hints derived from the natural grazing of the goats.
