Black Pig Soppressata Lucana
The soppressata is considered the queen of cured meats. The one we offer is handcrafted by the Salumificio di Giampiero in Castelmezzano. The farms from which the meat comes are from a controlled supply chain and 100% Lucana, Italian. The soppressata is seasoned with black pepper and salt. It contains no preservatives, colorings, nitrates, or nitrites.
The black pig is a breed that has a slightly higher fat mass than the white one, and the flavor is decidedly superior. The coloration is also slightly darker compared to a classic soppressata, but in qualitative terms, it is superior.
