Pietro, the owner, started cultivating Cardoncelli Mushrooms, which he transforms at the Rossato company in Rotonda, famous among other things for the renowned Red Eggplant. The other company that processes Cardoncelli mushrooms is that of Laura Pantone in Pietrapertosa. The mushrooms inside are finely sliced, crunchy, and meaty. The seasoning is made with extra virgin olive oil, oregano, mint, garlic, ground pepper, vinegar, and salt.
