Cetara is a small town on the Amalfi Coast, a reality known worldwide for its anchovies.
Even today, tradition dictates that fishing takes place during specific periods of the year and that the processing of the anchovies is carried out strictly by hand. After cleaning, the anchovies are wisely placed in containers made of glass or wood, such as terzigni , where layers of anchovies and layers of salt alternate.
They have a larger size than average because the fishing is very selective, using only large nets.
