The gnummareddi are Typical of Basilicata, Puglia, Molise and Irpinia.
They are produced with the lamb or kid's interior. The liver, heart and kidney is used to then be tight inside their own gut together with spices like parsley.
I'm Approximately 5cm long and weigh about 50-60g each.They cook grilled grilled or in the oven and even stewed. The product is worked once the order is received.
