Lucanian Gnummareddi
Gnummareddi are typical of Basilicata, Puglia, Molise, and Irpinia.
They are made with the offal of lamb or kid. The liver, heart, and kidney are used and then stuffed into their own casing along with spices such as parsley.
They are approximately 5cm long and weigh about 50-60g each. They are cooked grilled over charcoal or in the oven, and also braised. The product is processed once the order is received.
