Buffalo mozzarella is generally produced in Campania, the queen region for this specialty. We met Egidio who lives in the Matera Hills in Stigliano to be precise, who produces in his small workshop delicious buffalo mozzarella from his own dairy farm.
Why did we choose him?
Because the forage he gives to his livestock is his. Because the cheesemaker is from Campania bringing the know-how to a region lacking this type of dairy.
