Caciocavallo Podolico from Brindisi di Montagna is a rare and authentic cheese, made from the milk of Podolica cows raised free-range. It is part of the Slow Food Presidia and the Ark of Taste, a testament to its cultural and gastronomic value.
Aged for a minimum of 6 months (up to 12), it develops intense aromas, natural color variations, and rich, old-fashioned flavors. Produced in small batches using artisanal methods passed down through generations, it is— in our opinion—one of the finest caciocavallo cheeses available. Every bite tells a story and delivers true satisfaction.
