Strascinati are among the most distinctive traditional pasta shapes from Basilicata. Pastificio Lucanella makes them with selected durum wheat semolina, following a method inspired by the original recipe. Traditionally, the dough was dragged across a wooden board with the fingers to create its irregular shape, designed to hold sauces.
