Description

A Pecorino That Celebrates Lucanian Cheesemaking

Pecorino di Forenza is one of the signature cheeses of Basilicata, made by Caggiano Summo, a historic dairy also known for the prestigious Pecorino di Filiano PDO. An artisan raw-milk cheese expressing the richness of Lucanian pastures.

Raw Milk, Natural Grazing and Long Ageing

Pecorino di Forenza is made from milk from flocks that graze freely for approximately eight months of the year, feeding on local wild herbs. Ageing starts at three months and may exceed twelve months, giving the cheese a firm texture and straw-yellow colour that intensifies over time. Its hard, characteristically golden rind is traditionally treated with olive oil to aid preservation.

Perfect for Cheese Boards and Great Red Wines

Pecorino di Forenza has a bold, robust flavour, with elegant herbal notes reminiscent of Lucanian pastures. As it ages, its taste becomes increasingly complex and slightly piquant. Enjoy it on a cheese board with honey and preserves, or pair it with full-bodied red wines for aperitifs and tastings celebrating the finest foods of Basilicata.
