The Ingredients of the Traditional Recipe

The Lucanian recipe for Pasta and Beans is distinguished by its use of:

• durum wheat semolina pasta,
• legumes,
• extra virgin olive oil,
• and the characteristic ground Crusco Pepper,

an ingredient that gives the dish its unmistakable colour and delicate aroma. In some areas of Basilicata, the dish is also enriched with pork rind, following recipes handed down over time.
