Cavalcante Extra Virgin Olive Oil is extracted at temperatures below 27°C using modern mechanical methods. Aromas of fresh grass and romaine lettuce lead to a pleasantly bitter flavour, characteristic of quality extra virgin olive oil naturally rich in polyphenols.
