These Artichokes in Oil are produced by La Pietrapertosana, a company founded in Pietrapertosa, one of Italy's most beautiful villages, in the heart of the Lucanian Dolomites. After careful selection, the artichokes are cleaned, cut and blanched in water and vinegar before being preserved in oil, enhancing their natural flavour. Sudrise also offers a version by Mirogallo, a historic producer from Matera specialising in preserving Lucanian vegetables.
