Typical pasta from Corleto Perticara, in Basilicata. Tradition has it that it is produced from the scraps of other pastas, which are then "re-massed" and passed through the "mbllmbander," a special tool similar to a grater with larger holes.
Typically used with a meat broth but also with a ragù or tomato sauce.
