Fresh Red Eggplant of Rotonda PDO is small in size, with flesh rich in seeds and a slightly bitter flavour that distinguishes it from ordinary eggplants. Its characteristic red colour is due to the high concentration of carotenoids during ripening, a distinctive feature that makes it immediately recognisable among Italian varieties.
