Over the years, Vincenzo Tiri has managed to raise the bar for quality in terms of leavened products. In his small workshop, he has created the best colomba Gambero Rosso 2017, and among the varieties of Tiri colombe, we find the one with Apricot made with top-quality ingredients.
The dough requires 72 hours of leavening and 3 processing phases.
The delicacy of the dough, the enveloping aroma, and the yellow color of the paste are truly captivating.
