Mild Red Soppressata is a traditional speciality of the Pollino area between Basilicata and Calabria. Unlike the classic version, it contains ground Senise pepper, which gives the cured meat its distinctive red colour and delicate, non-spicy flavour.

Semi-Free-Range Pork and Artisan Preparation

Made with lean pork from semi-free-range herds, it is seasoned with salt, whole black peppercorns and ground Senise pepper. Its natural casing is shaped through a traditional hand-tying technique that follows the casing's seam, without machinery.

Serve Mild Red Soppressata sliced on rustic bread, with mature cheeses and other cured meats. Its gentle pepper aroma makes it ideal for traditional Lucanian tasting platters.
